Green bean casserole

Ingredients:

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • ¼ cup dice onion
  • 1 cup sour cream 3 (14.5 ounce) cans green beans
  • 14.5 oz. green beans can
  • 2 cups shredded cheddar cheese
  • ½ cup crumbled buttery round crackers
  • 1 tablespoon melted butter

Directions:

  1. Preheat oven to 350 degrees
  2. Melt 2 tablespoons butter in a skillet on medium heat
  3. Stir in flour until smooth
  4. Cook for one minute
  5. Stir in the salt, sugar, onion and sour cream
  6. Add green beans, and stir to coat.
  7. Transfer the mixture to a 2 ½ quart casserole dish
  8. Spread shredded cheese over the top
  9. In a small bowl, toss together cracker crumbs and remaining butter
  10. Sprinkle over cheese
  11. Bake for 30 minutes or until the top is golden and cheese is bubbly

Pumpkin pie

Cook Time: 3 hours
Servings: 8

Ingredients:

Crust:

  • 1 ⅓ cups all-purpose flour
  • ½ teaspoon salt
  • ⅓ cup vegetable oil
  • 2 tablespoons water

Filling:

  • 2 eggs
  • ½ cup sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ teaspoon ground ginger
  • ⅛ teaspoon ground cloves
  • 1 can (15 oz) pumpkin
  • 1 can (12 oz) evaporated milk
  • Whipped Cream:
  • ¾ cups whipping cream
  • 2 tablespoons sugar

Directions:

  1. Heat oven to 425°F
  2. In medium bowl, mix flour, ½ teaspoon salt and oil with fork
  3. Sprinkle with cold water, tossing with fork until all water is absorbed
  4. Shape pastry into a ball
  5. Press in bottom and up side of 9-inch pie plate
  6. In large bowl beat eggs
  7. Beat in ½ cup sugar,cinnamon, ½ teaspoon salt, ginger, cloves, pumpkin and milk
  8. Pour pumpkin filling into pie plate
  9. Bake 15 minutes
  10. Reduce oven temperature to 350°F
  11. Bake 45 minutes
  12. Cool pie for 2 hours
  13. In chilled bowl beat whipping cream and sugar

Cornbread stuffing

Ingredients:

  • 8 cups crumbled cornbread
  • 4 chopped hard cooked eggs
  • 1 chopped green pepper
  • 1 chopped white onion
  • 2 chopped celery ribs
  • Chopped turkey
  • 2 minced garlic cloves
  • 1 ½ teaspoon poultry seasoning
  • ½ teaspoon salt
  • 3 eggs
  • 3 cups chicken broth

Directions:

  1. Heat oven to 350 degrees
  2. In large bowl, combine cornbread, eggs, pepper, onion, celery, turkey, garlic, poultry seasoning, salt and pepper
  3. Mix eggs and chicken broth together in separate bowl
  4. Combine both mixtures
  5. Place in 13×9 baking pan
  6. Cook 45 minutes

Twice-baked sweet potatoes

Prep Time: 20 minutes
Cook Time: 1 hour 25 minutes
Servings: 4

Ingredients:

  • 4 sweet potatoes
  • 5 tablespoons brown sugar
  • ½ teaspoon ground nutmeg
  • A pinch of cayenne pepper
  • ½ stick unsalted butter
  • Vegetable oil
  • Salt
  • Pepper
  • ½ cup chopped pecans

Directions:

  1. Heat oven to 375 degrees
  2. Bake potatoes for 1 hour and 15 minutes
  3. Cool potatoes and cut them vertically
  4. Scoop out inside of potatoes
  5. Mix the potatoes insides, cinnamon, nutmeg, cayenne pepper and butter together until smooth
  6. Season with salt and pepper
  7. Fill the potato bases with the mixture
  8. Drizzle a roasting tray with the vegetable oil
  9. Mix 3 tablespoons of sugar and pecans in a small bowl for topping, and sprinkle each potato with it
  10. Bake 10 minutes
