Sushi, fresh and delicate, is often served in bite sized pieces, typically packed with vegetables,
avocadoes, and seafood in a roll. But what about in a sandwich?
For all the sushi lovers who crave that savory, refreshing flavor, meet onigirazu, the sushi
sandwich and a modern variation of the classic onigiri. Onigirazu can be prepared in many different
ways. Let’s make a version for those who love a little spice:
Prep Time: 2 min. Cook Time: 8 min. Servings: 1 person
Ingredients
For the rice:
• 1 1/2 cup cooked rice
• 1/2 tbsp rice vinegar
• 2 tbsp sugar
• 1 tsp salt
For the fillings:
• canned tuna
• 1 ripe avocado
• 1 cucumber
• drizzle of kewpie mayo
• drizzle of siracha
Other
• 2 nori sheets (full)
• Sriracha mayo
Instructions
For the filling:
1. In a small bowl, combine the tuna, kewpie mayo, and sriracha. Set aside.
2. Peel and slice the avocado, then set it aside ready for assembly.
3. Chop the cucumber, then set it aside ready for assembly
For the rice:
1. In a small bowl, combine the rice vinegar, sugar, and salt.
2. Place in the microwave for 30 seconds or until the salt and sugar dissolve, then pour it over
the cooked rice. Fluff it up and give it a stir. Set aside.
Assembly:
3. Rip a sheet of plastic wrap and place on top of a chopping board, then place a sheet of nori
over the plastic wrap diagonally, so that one of its corners faces you.
4. Scoop up half of the rice and place it in the center of the nori sheet. Shape the rice into a
rectangle.
5. Add a layer of cucumber, then tuna, then avocado, then the remaining rice. Top with a square
piece of nori (grab a second sheet of nori, cut
it into fourths and use one of the squares)
6. Fold all four corners of the nori sheet to the center and wrap it with the plastic wrap that’s
underneath
7. Set aside for a few minutes. When the nori sheet has settled, cut in half, unwrap, and enjoy!
Can be served with soy sauce or sriracha
mayo if desired.
